Vegan Chocolate Chia Seed Pudding

Don’t let the name fool you, this is actual pudding and contains sugar so it’s not the healthiest but makes a great brunch dessert.  It was the best idea I could think of that was gluten free, low FODMAP, egg free, dairy free, almond free and nightshade free to accommodate everyone.



  • 1 Package of European Gourmet Bakery Organics chocolate pudding
  • 2 cups of walnut milk (I use Elmhurst brand; any nut milk will work or regular milk if you tolerate it)
  • 1 tablespoon of chia seeds

 

Make pudding according to package instructions and then add chia seeds, refrigerate at least 2 hours, I made mine the night before.  




Makes 4 servings
