Southwest Chicken and Rice – Low FODMAP style





  • 2 pounds of boneless chicken meat (thighs or breasts – I use a mix pack)
  • 1 tablespoon of low FODMAP chili seasoning or mix of ancho chili powder/cumin/oregano/paprika/salt
  • Chicken broth (homemade or I use Massel’s stock cubes)
  • 1 can of butter or navy beans, well rinsed
  • 1 tub of lactose free sour cream (I use Organic Valley brand)
  • 1 jar of low FODMAP salsa (I use FODY brand)
  • 1 bag of microwave rice
  • Garnish - green onion, fresh cilantro, avocado, shredded cheese and tortilla chips

 

Add chicken, seasoning and broth to crockpot; cook on low for 4 hours; shred chicken, add in beans, rice, sour cream and salsa; simmer for another 20 minutes

Serve with tortilla chips, shredded cheese, fresh cilantro, avocado & green onion

Notes: keep your serving size of the beans to less than ¼ cup if oligos-GOS bothers you
