BLT Lobster Roll Mashup

International Bacon Day happened to be during Labor Day weekend this year so I had to add some bacon to my lobster rolls!  It was like combing a BLT with a lobster roll.

 


  • Cook and chop 3 strips of bacon
  • Boil and chop 6 small lobster tails
  • Squeeze fresh lemon juice on the lobster

 

  • Combine above in a bowl with:
    1 tablespoon of dried dill

    1 tablespoon of dried chives

    2 chopped celery stalks (this should be a safe serving size but if mannitol            bothers you, ease up on the amount of celery and substitute some bell pepper     for a crunchy texture

    1/2 cup of mayonnaise or to desired consistency

    1/4 cup of green onion (green tops only)


Serve on gluten free rolls (I use the Schar brand baguette) lined with arugula and top with fresh chives and dill (makes 8)
