Lobster Roll Baguettes – GF & Low FODMAP
I love lobster rolls and this a perfect appetizer version for holiday parties!
Boil and chop 6 small lobster tails
Squeeze fresh lemon
juice on the lobster
Combine in a bowl
with:
1 tablespoon of dried
dill
1 tablespoon of dried
chives
2 chopped celery
stalks (this should be a safe serving size but if mannitol bothers you, ease up
on the amount of celery and substitute some bell pepper for a crunchy texture
1/2 cup of
mayonnaise
1/4 cup of green
onion (green tops only)
Serve on gluten free
baguettes and top with fresh chives
