Sweet Cauli Chowder – GF, Dairy Free & Low FODMAP

I frequently roast sheet pans of veggies to have on hand and I had some sweet potatoes and cauliflower that I decided to blend up into a soup – I’m feeling fallish this week….I’ve made beefy noodles and 2 soups so far!

 


Cauliflower

Sweet potato

Broth (bone or veggie to keep vegan)

Garlic infused olive oil

Nutritional yeast

Sea salt

 

  • Roast 1 head of cauliflower and 1 large sweet potato tossed in garlic infused olive oil (use certified low FODMAP brand if necessary) and sea salt at 400 degrees for about 30 minutes
  • Once cooled, combine veggies with 1 tablespoon of nutritional yeast and approximately 3 cups of homemade broth (you can substitute store brand if you are not low FODMAP) and blend to desired consistency – I like mine a little chunky!
  • Add sea salt to taste and extra garlic oil if desired
