Roasted Radishes




Truth be told….I don’t love raw radishes but I love them roasted or even sautéed.  They make a great substitute for potatoes in a breakfast hash or just a great dinner side.  This time of year, we’re fortunate to get some great radishes from the farmer’s market!


  • Clean and quarter radishes
  • Toss in olive oil and sea salt
  • Roast at 400 for about 20 minutes (stirring once half way through)

 
I like to toss mine in a bit of fresh chives and dill

Not related to radishes but since I’m on roasted veggies…roasted broccoli is also a fav of mine (same prep - just roast in olive oil and sea salt) and it’s best served in a parmesan cheese bowl! - Bake a handful of parmesan cheese on a cookie sheet in the oven at 400 degrees until almost golden brown – about 5 minutes - and then form over an upside down glass or bowl depending on the size you need – these can be made the night before, the cheese cups keep well in the refrigerator.
