Peachy Chicken Pasta Salad – Better Homes & Gardens Recipe
I love this recipe,
it’s from the Better Homes & Gardens Mediterranean Recipes 2020 edition and
it needed very few modifications to be low FODMAP. You can even make it a meatless Monday meal by
skipping the chicken.
Here’s a quick
summary:
- Grill chicken tenders with olive oil and sea salt until cooked through
- Prepare quinoa noodles according to package instructions, drain and toss with olive oil and sea salt
- Clean and chop one peach and one pear
- Combine noodles, chicken, fruit, walnuts and toss with balsamic vinegar, top with fresh basil (I used purple but green would probably look better)
Note: they have red onion in the recipe, I omitted
this but you could substitute green onion or chives
