Great Aunt Karen’s Tomato
Salad
I love tomato season
and I had a blast last week with my Aunt and Uncle in Montana! We had so many good meals and we had a blast
telling old stories and making this very simple tomato salad that my Great Aunt
used to make.
It’s really just
tomatoes and cucumbers tossed with sea salt at room temp for about an hour and
then drizzled with olive oil and apple cider vinegar before serving. You can certainly add fresh herbs such as
dill, parsley or chives for additional flavor but I like the simple fresh taste
of the salad with just sea salt.
