Cheesy Seafood Spaghetti
- Spaghetti style quinoa noodles
- Seafood of choice (precooked) – I used a frozen mussels steam packet and popped in the microwave for 4 minutes
- Garlic infused olive oil
- White cheddar cheese
- Parmesan cheese
- Lemon
- Sea salt
- Fresh herbs – chives, parsley and basil
- Add noodles to boiling water and cook according to package instructions (about 15 minutes)
- Shred cheese while noodles are cooking
- Drain noodles (reserve some pasta water), drizzle in olive oil, add shredded cheese, mix to combine and add a touch of pasta water if the sauce is too thick, add seafood and squeeze fresh lemon juice over the dish, salt to taste and top with herbs
