Lobster Rolls – GF & Low FODMAP

These were a belated birthday dinner for our oldest who loves lobster rolls!  I feel like they are a bit different each time I make them, depends what I have on hand for veggies and herbs.  Here’s what landed in this batch.

 


3 medium lobster tails, boiled and chopped

Fresh lemon juice squeezed on the lobster

 

Combined in a bowl with:

1 tablespoon of dried dill

2 chopped celery stalks (this should be a safe serving size but if mannitol bothers you, ease up on the amount of celery)

1/2 red bell pepper, chopped

1/4 cup of green onion (green tops only)

1/2 cup of mayonnaise (or to desired consistency)

Served on gluten free rolls (I used Schar brand baguettes)

Topped with arugula, fresh chives and fresh dill sprigs

Makes about 4-5
