Let's Get Fresh - Microgreen Omelet
I love omelets and this breakfast is packed with nutrients and quick to make!
I got some fresh microgreens at the farmer's market last weekend and Adam made me this amazing breakfast - omelette with cheddar cheese and microgreens, pan fried gold potatoes with fresh herbs, mango kombucha and fresh apricots.
Note: To save time we usually microwave the potatoes first until they're close to soft then chop and finish them in the frying pan with olive oil, sea salt and fresh chives and parsley.
