Grilled Pineapple Chicken
This was definitely
a case of what can I throw together without going to the store tonight. I found some chicken tenders in the freezer,
a can of crushed pineapple, a bag of arborio rice and low FODMAP BBQ sauce in the
pantry and some fresh cilantro in our herb garden and here’s what I came up
with up…
- Use ½ can of crushed pineapple to marinate the chicken tenders with a dash of sea salt and dried cilantro for about 30 minutes
- Grill chicken until cooked through
- Make rice according to package while chicken is on grill (use garlic olive oil in place of butter)
- Add fresh cilantro and the remaining crushed pineapple to the rice once it’s finished cooking
- Top rice with the grilled chicken, drizzle low FODMAP BBQ sauce and add sea salt to taste
