Breakfast Nachos
I’m tagging along
with Adam this week on a work trip to FL and it’s crazy hot for this pale Irish
girl! This morning I went for a swim and
came up to some amazing breakfast nachos – there’s nothing healthy about this
dish but it’s delicious.
- GF corn chips
- Shredded cheese of choice
- Eggs
- Bacon
- Chives
- Red bell peppers
- Tomatoes
- Lettuce (I used shredded iceberg and arugula)
*Optional – a side
of salsa – see recipe at bottom of post
- Fry and chop bacon
- Scramble eggs with diced red bell pepper and chives
- Top corn chips with eggs, bacon and shredded cheese – bake at 350 for about 5 minutes or until cheese is melted
- Top with fresh cut tomatoes and shredded lettuce
Fresh cilantro and
sliced green onion would also be a great topping for this
*Salsa Recipe
Combine:
25 oz of crushed
organic tomatoes
4 tablespoons of fresh
chopped parsley
4 tablespoons of
fresh chopped cilantro
4 tablespoons of
fresh chopped chives
4 tablespoons of
chopped green onion (green tops only)
1 tablespoon of
garlic infused olive oil (certified low FODMAP if necessary)
Squeeze of fresh
lime juice
Sea salt to taste
(watch quantity if the tomatoes have salt)
