Scallop Veggie Skewers & Cilantro Lime Rice – GF & Low FODMAP
Skewer raw sea
scallops and assorted vegetables, drizzle with honey lime dressing, reserving some
for serving, grill until cooked through, serve with cilantro lime rice and top
with reserved sauce
Honey lime sauce – whisk 1 tablespoon of garlic infused olive oil (certified low FODMAP), 1 tablespoon
of fresh lime juice with 2 teaspoons of honey add sea salt to taste
Cilantro lime rice –
cook arborio rice according to package instructions with garlic infused olive oil
and chicken broth in place of butter and water, add dried cilantro (chopped red bell
pepper also makes a great addition). Before
serving, squeeze in fresh lime juice and add chopped fresh cilantro.
