Happy Earth Day
In celebration of
Earth Day we’re choosing some fresh fruits and vegetables (local organic when
possible) to go with a “lower carbon footprint” meat. We’re using chicken and stuffing it with
apples and figs.
Stuff sliced green
apples and fresh figs under the skin of the chicken thighs, drizzle with olive
oil and sea salt, roast until almost cooked through, drizzle honey on the
chicken and finish roasting.
We’re serving the
chicken up with a stack of fresh fruit and roasted baby red potatoes tossed in
a mustard chive dressing:
1 tablespoon of
stone ground mustard
1 tablespoon of
olive oil
2 teaspoons of apple
cider vinegar
1 teaspoon of honey
Toss with fresh
chopped chives
Sea salt to taste
