An Irish Easter Feast for 2
This is our first
holiday we’ve had to spend without family so we decided on an Easter feast for
2 right out of my Irish Cooking Bible:
Spiced honey glazed ham, colcannon and a simple Irish salad. Thankfully my mother-in-law accepted a delivery for dinner!
Colcannon is basically
potatoes mashed with butter, milk and a green vegetable such as cabbage or
kale. Today I am mashing up gold potatoes
with butter, garlic infused olive oil and mixing in sauteed cabbage and green
onion with a few chives for topping.
We’re adding a fresh
component to this heavy salty meal with a classic simple salad – arugula,
romaine, radishes, cucumbers, and hard boiled eggs all tossed in a honey
mustard dressing:
3 tablespoons of mayonnaise
1 tablespoon of stone
ground mustard
1 tablespoon of
olive oil
1 tablespoon of apple cider vinegar
1 tablespoon of apple cider vinegar
2 teaspoons of honey
Sea salt to taste
