Plum Wine Chicken

This is another spin on my dutch oven chicken.  I’m trying out some dried fruit I got for Christmas for a sweet and savory dish.

 


Chicken leg quarters seared in garlic infused olive oil, salt and pepper

Peeled/diced sweet potatoes, gold potatoes, rainbow carrots, turnips and radishes

Poultry herbs – rosemary, thyme, sage

Dried plums

1 cup of dry white wine

1 cup of low FODMAP chicken broth (I use a Massel stock cube with water)

 

Preheat oven to 350

Season and sear chicken

Add wine, broth, veggies, herbs and dried plums

Cover and bake approximately 2 hours
