Vegan Chocolate Bark

I love this bark for a healthier holiday treat but it’s great anytime of the year!  This one is gluten free, low FODMAP, vegan and packed with vitamins and minerals!

 


  • Enjoy Life mega chunks - semi sweet chocolate (this brand is vegan and GF)
  • Pepitas (pumpkin seeds)
  • Sunflower seeds
  • Toasted coconut
  • Nuts of choice

 

Toast shredded coconut (unsweetened) at 400 for 1 minute; melt chocolate over double boiler; pour chocolate onto parchment lined baking sheet, top with nuts and seeds; refrigerate until set (about 1 hour)

 

FODMAP Notes: I used cashews but keep serving to less than 10 nuts or choose walnuts or pecans to accommodate a larger serving size.
