Cheesy Ranch Potatoes– GF & Low FODMAP

This is my spin on the gluten/dairy filled funeral potatoes that I so love!

 


  • 1 bag of diced hash browns, about 32 oz
  • 1 container of lactose free sour cream, about 16 oz (I use Green Valley Organics)
  • Sea salt and pepper or low FODMAP ranch seasoning for extra flavor - I use Salt N Sanity Supper Club Ranch
  • 1 cup (or so 😊) shredded cheese (I use a blend of parm, asiago, provolone and fontina)
  • 2 tablespoons melted butter - optional

 

Defrost potatoes in microwave, about 7 minutes; mix in sour cream, cheese, ranch or sea salt and melted butter if desired

Bake covered at 350 for about 45 minutes, uncover for last 10 and top with more cheese if you want the top browned
