Loaded Baked Potato Soup – GF & Low FODMAP

 


It’s that time of year when I want hot soup every day and I really love cheesy potato soup – this one is low FODMAP and can easily be dairy free with vegan cheese. 

 


  • 2 pounds of Yukon potatoes, peeled and chopped
  • 3-4 cups of water (depending on desired consistency)
  • 2 Massel stock cubes (or any low FODMAP brand)
  • Toppings: green onion (green tops only to keep low FODMAP), shredded cheese, bacon (cooked and chopped)

Add potatoes, water and stock cubes to pressure cooker; cook on high pressure for 20 minutes; release pressure; use immersion blender to puree (leave some potatoes whole for a chunky texture), add toppings

Makes 4-6 servings
