Loaded Ranch Cauliflower – GF & Low FODMAP

 


I love loaded potatoes and this is a “lite” version using cauliflower

 


  • 1 head of cauliflower, cleaned and chopped into florets
  • Olive oil
  • Sea salt
  • Shredded cheese (I use a blend of parm, asiago, provolone and fontina)
  • Lactose free sour cream (I use Green Valley Organics)
  • Low FODMAP ranch seasoning (I use Smoke N Sanity Supper Club Ranch)
  • Toppings: green onion (green tops only to keep low FODMAP) & bacon (cooked and chopped)

Roast cauliflower at 400 for 20 minutes in olive oil and sea salt; combine in baking dish with sour cream (about 6 ounces), shredded cheese (about ¼ cup) and ranch seasoning (about 1 tablespoon); bake for 20 minutes at 350; top with bacon and green onions.
