Loaded Ranch Cauliflower – GF & Low FODMAP
I love loaded potatoes
and this is a “lite” version using cauliflower
- 1 head of cauliflower, cleaned and chopped into florets
- Olive oil
- Sea salt
- Shredded cheese (I use a blend of parm, asiago, provolone and fontina)
- Lactose free sour cream (I use Green Valley Organics)
- Low FODMAP ranch seasoning (I use Smoke N Sanity Supper Club Ranch)
- Toppings: green onion (green tops only to keep low FODMAP) & bacon (cooked and chopped)
Roast cauliflower at
400 for 20 minutes in olive oil and sea salt; combine in baking dish with sour
cream (about 6 ounces), shredded cheese (about ¼ cup) and ranch seasoning
(about 1 tablespoon); bake for 20 minutes at 350; top with bacon and green
onions.
