Seafood Salad Sandwiches – GF & Low FODMAP

This isn’t much a recipe, just turning my leftover crab into a sandwich for a quick and portable lunch to go!

 

Combine crab meat with mayo, chopped celery, green onion and a squeeze of lemon. 

Serve on gluten free bread - I love the Schar brand ciabatta rolls and they are certified low FODMAP!



Fresh dill, chives & arugula would also be great additions to make it more of a lobster roll style sandwich. 

 

FODMAP notes:  keep your celery intake to less than a 1/3 of a stalk if mannitol bothers you.
