Hot-Buttered Rum Waffles
It’s hot-buttered rum day and we’re turning the classic sweet drink into waffles! I have to admit I’ve never had one of these of drinks – they sound too rich & sugary for me but I thought it would make a great waffle batter for the occasional brunch treat. These are GF, grain free and low FODMAP. I also made them with non-alcoholic rum but you could use regular spiced rum.
- 2 cups cassava flour from Hearthy Foods
- 3 tablespoons of brown sugar (I used only 2 since I was going to top with fruit and maple syrup)
- 1 3/4 teaspoon of baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon of salt
- 1/4 teaspoon of cinnamon
- Dash of ground cloves
- Dash of nutmeg
- 1/4 cup of NA Seedlip Spice 94 or spiced rum
- 1 1/2 cup walnut milk (I use Elmhurst brand) or regular milk
- 2 eggs
- 2 teaspoons vanilla
- 1 stick of melted butter
Heat waffle iron, whisk dry ingredients, whisk wet ingredients, mix wet into dry, whisk melted butter into batter, pour into waffle iron, serve with fruit or maple syrup
