3 Kings Mini Cakes

 

Happy Epiphany!!!  It’s the end of the 12 days of Christmas so I’m making 3 kings mini cakes (AKA donuts) and decorating them with the classic Epiphany colors of yellow, green and purple.

 

3/4 cup banana flour from Hearthy Foods

1/2 cup kabocha pumpkin flour from Hearthy Foods

1 1/2 teaspoon baking soda

1/4 teaspoon of salt

1 teaspoon of cinnamon

1 teaspoon of nutmeg

1 teaspoon vanilla

2 tablespoons of olive oil

1 cup walnut milk (I use Elmhurst brand)

2 eggs

 

 

Blend ingredients and pour in greased donut pan bake at 325 for about 12 minutes

Top with frosting (I used Simple Mills vanilla mixed with a dash of cinnamon and nutmeg) and sprinkles.
