Blueberry Topped French Toast
I’m not ready to give up all the holiday comfort foods and I’ve been eating a lot of french toast lately!
Lightly whisk a
couple eggs with a dash of vanilla and cinnamon
Dip GF bread (I used
Canyon Bakehouse) in egg mixture, cook in a fry pan with a bit of butter,
ghee or olive oil
Top with organic
blueberries (I used frozen and microwaved until warm and saucy)
Serve with maple syrup and a non-alcoholic “minosa” - I get the Gruvi brand of Prosecco and mix with juice
Low FODMAP notes: keep blueberry serving to 1/4 cup if fructans bother you.
