Birthday Beef Wellington – GF!

Beef Wellington is my favorite meal (outside of pasta)!  Adam made me this amazing birthday dinner with the Gee Free brand of puff pastry and it turned out perfect!

 


  • Tenderloin steaks
  • Mushrooms (oysters are low FODMAP, canned are as well)
  • Puff pastry
  • Garlic infused olive oil
  • Dijon mustard (watch spices in the brand you choose)
  • Mayonnaise
  • Honey
  • Salt

Mix mustard, mayo and honey for sauce (I do about equal parts mustard/mayo and just a drizzle of honey)

Sautee mushrooms in garlic infused olive oil & salt until cooked down, chop or blend

Roll out puff pastry sheets to desired consistency – I tend toward the thin size to keep from “puffing” too much and splitting apart

Sear steaks in the olive oil on all sides, salt

Add a scoop of mushroom mixture to the puff pastry, brush layer of mustard sauce on the steak, put steak on the pastry (mustard side down on the mushrooms), wrap up tenderloin

Bake at 375 for about 15-20 minutes or until pastry is done and steak is to temperature.
