Veggie Stuffed Over-Easy Eggs
I eat a lot of eggs and when you can’t decide between an omelet or an over-easy, you have both!
Cook 2 over-easy
eggs in olive oil and sea salt (side by side in pan so they “connect”)
Top with low FODMAP
cheese and veggies (I used red bell pepper, arugula and cheddar)
Carefully fold in half
and try not to break the yolks!
