Roasted Cauliflower & Carrot Soup
This is a great way to get in your veggie servings
Roast cauliflower and
chopped carrots in garlic infused olive (use certified low FODMAP brand if
necessary) and sea salt at 400 degrees for about 30 minutes
Combine veggies with
homemade bone broth (you can substitute store brand if you are not low FODMAP)
Blend and stir in 1-2
tablespoons of nutritional yeast and simmer for 1 hour
Serve with fresh
parsley
Low FODMAP
Notes: limit serving to ½ cup if
mannitol bothers you
