Salmon Slaw Sandwich
I have to admit I was looking for a quick lunch – I did not make the salmon, I got takeout and then added it to a Schar gluten free baguette – I wish I loved just fish and veggies but I really prefer a sandwich!
Grilled salmon
GF baguette
Bag of coleslaw
Deli or stone-ground
mustard
Olive oil
Mayo
Apple cider vinegar
Honey
Add salmon to a GF baguette and top with mustard slaw:
Toss shredded
cabbage (stick with green and red not Napa) with mustard dressing (best to let
rest in the fridge for about an hour)
1 tablespoon of
stone ground mustard (watch spices to ensure low FODMAP if necessary)
1 tablespoon of olive
oil
1 tablespoon of mayo
2 teaspoons of apple
cider vinegar
1 teaspoon of honey
Sea salt to taste
