White Chicken Chili – Low FODMAP style
I made a batch of this for an office lunch on National Tortilla Chip Day - what goes better with corn chips than chili?
- 2 pounds of boneless chicken meat (thighs or breasts – I use a mixed pack)
- 1 tablespoon of cumin
- 1 teaspoon of ancho chili powder
- 1 teaspoon of oregano
- 1 teaspoon of paprika
- Salt
- Chicken broth (homemade or I use Gourmend organic low FODMAP broth)
- 1 can of butter beans, well rinsed
- 1 tub of lactose free sour cream (I use Organic Valley brand)
- 1 jar of low FODMAP salsa (I use FODY brand)
- Garnish - green onion, fresh cilantro, shredded cheese and tortilla chips
Add chicken,
seasonings and broth to crockpot; cook on low for 5 hours; shred chicken, add
in beans, sour cream and salsa; simmer for another 30 minutes
Serve with tortilla
chips, shredded cheese, fresh cilantro & green onion
Notes: keep your
serving size of the beans to less than ¼ cup if oligos-GOS bothers you
