Sweet Potato Thyme Waffles

 I love brunch!!!  This family get together felt a bit like putting a puzzle together with our youngest visiting – she has slightly different allergies than I am used to cooking for. 

Thank God Adam grilled a prime rib and then I just had to find some additional dishes that were:  gluten free, low FODMAP, almond free, egg free, dairy free and nightshade free! 

In addition to a roasted radish hash, chocolate chia seed pudding and a fruit plate (I did try to count the mimosas and bloody mary bar as sides too) I made these 3 ingredient sweet potato waffles.

 

Microwave a sweet potato until soft, remove skin

Mash with garlic infused olive oil and a pinch of fresh thyme leaves

Add sea salt to taste (I guess that makes 4 ingredients)

Put mixture in waffle maker until set (about 4 minutes)

 


Note:  I made these the night before and then reheated in the oven so they crisp up a bit, they are very soft when they come out the waffle iron
