Cupcakes – No Recipe Needed
The GF market has
really come a long way in the last 15+ years.
These cupcakes were made out of a box and put together in minutes –
they’re a great alternative to baking from scratch when you have several other
dishes to prepare. I made this batch for
a cookout celebrating my Mother-In-Law’s birthday and there were not many leftover.
- Box of GF yellow cake (I like King Arthur and Betty Crocker)
- Ingredients needed for cake – see notes below on milk substitutes
- Can of organic frosting (I use Simple Mills brand)
- Package of GF sandwich cookies (I use Kinnikinnick brand)
Note: I never use regular milk but have found
several options for the King Arthur mix:
- Champagne – gives a very light and fluffy texture, I always use this for brunch, wedding showers, New Year’s dinner, etc
- Tequila – gives a rich boozy flavor, I always use this for Cinco de Mayo or Mexican night
- Walnut or hazelnut milk – good “regular” milk substitute and the Elmhurst brand does not have any gums, or emulsifiers like most coconut or almond milks – just 2 ingredients: nuts and water
