Coq au Vin low FOD Style
This dish takes a bit of time but it’s a really hearty dish and easily made low FODMAP. I use a dutch oven for this.
Red wine – 1 bottle
(I use Cab)
Bone broth optional
in place of wine
Chicken thighs
Bacon
Diced carrots
Diced celery
Mushrooms – must be
canned (rinsed well) or oyster to be low FODMAP
Chopped green onions
(green tops only)
Garlic olive oil
Sea salt
Quinoa noodles for
serving – made according to package instructions and tossed in garlic olive oil
and sea salt (I use Andean Dream brand)
Fresh parsley for garnish
- Cook bacon until crisp, chop, set aside
- Sear chicken thighs in the garlic olive oil and sea salt until brown on both sides, set aside
- Sauté carrots, celery and mushrooms in garlic olive oil and sea salt until tender
- Add chicken back into the dutch oven with the carrots, celery & mushrooms, add green onion and red wine and cook at 400 for about 30 minutes or until chicken is cooked through.
- Top with chopped bacon and parsley and serve over quinoa noodles
