Nightshade Free Breakfast Hash
I continue to try and come up with breakfast ideas for Alli that don’t involve eggs, are dairy, gluten and nightshade free. It’s a bonus when I can make something that is low FODMAP so I can eat it too! This hash turned out pretty good. It’s roasted sweet potatoes, cauliflower and radishes topped with a chicken maple sausage and chives.
- Microwave sweet potatoes a couple minutes to par cook, remove skin and chop into bite size pieces
- Clean and half (or quarter) radishes
- Clean and cut cauliflower into small florets
- Toss sweet potatoes, cauliflower and radishes with garlic infused olive oil and sea salt (I think sage or thyme would also be great on this)
- Roast at 400 for about 25 minutes stirring once halfway through
- Top with chives or green onions and chicken sausage (I use Applegate chicken and maple – this seems to be low FODMAP, I have not had a reaction to it but try a small amount to start or use bacon)
