Beef Stroganoffish
This is a simple
take on beef stroganoff without the heavy cream sauce, mushrooms or
gluten! I had some leftover beef short
ribs and this was a perfect use for them.
- Shredded beef – I used short ribs that were cooked in red wine in the dutch oven and then shredded
- Quinoa noodles – I use Andean Dream brand (cleanest ingredients I can find)
- Garlic olive oil
- Fresh chives
- Fresh parsley
- Lactose free sour cream (I like Green Valley)
- Sea salt
Note: oyster
mushrooms are low FODMAP so you could also add these to the dish for extra
richness
Cook quinoa noodles according
to package instructions in salted water, drizzle with garlic olive oil, add a
spoonful of sour cream, top with beef and fresh herbs, add sea salt to taste
You could certainly
make this even creamier by adding butter or some shredded cheese - I left this
version lactose free
