Let’s Get Fresh – Wedge Salad

I love iceberg lettuce, it’s so crisp and refreshing!  I made this out of complete defiance when my cousin Jess said iceberg is useless.  I set out to prove it’s a great platform for bacon and I smothered it in her favorite honey mustard dressing.  See her comment below

• Mix chopped cherry tomatoes with garlic infused olive oil, a pinch of dried oregano and crumbled bacon
• Cut iceberg into wedge or round slices, top with bacon mixture and honey mustard dressing:
• 3 tablespoons of mayonnaise
• 1 tablespoon of stone ground mustard or Dijon
• 1 tablespoon of olive oil
• 1 tablespoon of apple cider vinegar
• 2 teaspoons of honey
• Sea salt to taste

lol  that is the best!! Love it! It is beautiful and very tasty I am sure! In my defense it was drilled in my head that iceberg lettuce has no nutritional value
