Let’s Get Fresh – Veggie Lobster Salad




Making a side dish a meal - this is pretty much my mango carrot salad but I’m trading carrots and lettuce for lobster

  • Fresh mango cut into strips (if following low FODMAP diet and sensitive to fructose – watch your serving size of the mango)
  • Red bell pepper cut into strips
  • Cucumber cut into strips
  • Cooked lobster tail (I boiled for about 7 minutes)




Add all ingredients to serving bowl and toss with cilantro lime dressing if desired:
  • Handful of fresh cilantro leaves
  • ¼ cup olive oil
  • 1 teaspoon of garlic infused olive oil (low FODMAP brand)
  • Juice and zest of 1 lime
  • Tablespoon or so of water to thin out
  • 2 teaspoons of honey
  • Salt to taste

Add all to food processor and pulse to desired consistency
