New Year’s Seafood Platter

Happy New Year’s Eve!!!  In the words of Charles Dickens, "It was the best of times, it was the worst of times" - I think this sums up 2020 for most people! 

Tonight we're focusing on all of the joy that this year brought, especially the birth of our second granddaughter.  It is also one of my favorite food holidays, we always do a cold seafood platter and it’s so easy to pull together!  You can mix and match to your liking and for ultra-simplicity you can get all pre-cooked items.  Here’s what I’m doing this year:

 


  • Lobster tails - boil approx. 7 minutes – shell should be bright red and meat should be white, cut shell with kitchen shears from open end to tail and lift meat over the shell
  • Lobster claws - these are precooked and frozen, I usually boil for a minute to unthaw
  • Snow crab clusters - same as above
  • Jumbo shrimp - these are frozen and pre-cooked; I give a good rinse in warm water to start unthawing
  • Mussels - I buy the fully cooked/frozen boxes – you just pop these in the microwave for 6 minutes (warning if they are in sauce as the ones shown, they are not low FODMAP – I will eat a couple after a good “rinse” to ensure no garlic is left behind on them but they are safe for people not following a low FODMAP diet)



Arrange seafood in bowl of ice, serve with lemon wedges and mustard sauce (see recipe below) or cocktail sauce (store bought is not low FODMAP),

 

Mustard sauce:

3 parts of mayonnaise

1 part of stone ground mustard or Dijon

1 part of olive oil

1 part of apple cider vinegar

Honey to taste

Sea salt to taste
