Low FODMAP Potatoes 2 Ways
I LOVE potatoes, especially loaded or twice baked!
I’m serving up 2
kinds for my husband that doesn’t like sweet potatoes and our youngest who prefers
not to eat white potatoes.
- Sweet potatoes
- Gold potatoes
- Spinach
- Bacon – cooked and chopped
- Shredded cheese (I used an Italian blend)
- Green onion (tops only)
- Garlic infused olive oil
- Sea salt
Microwave the sweet
potato until tender, cut open and stuff with spinach sautéed in garlic olive
and sea salt.
Par cook the gold
potatoes in the microwave, slightly mash to break open the skin, drizzle with garlic
infused olive oil, add chopped bacon (cooked) and shredded cheese. Bake for about 5 minutes at 375 and top with
green onion before serving.
