Strawberry Cassava Flour Pancakes
These are gluten free, dairy free and low FODMAP!
½ cup of Hearthy Cassava
flour
1 cup all-purpose GF
flour
2 teaspoons of
baking powder
½ teaspoon of salt
1 ¼ cup of walnut
milk (or water)
1 egg yolk
3 egg whites
2 tablespoons of
olive oil
2 tablespoons of maple
syrup
1 teaspoon of
vanilla
- Whisk dry ingredients
- Beat egg whites until fluffy
- Whisk remaining wet ingredients
- Stir wet into dry and fold in whites
- Cook ¼ cup batter on griddle about 2-3 minutes per side
Serve with fruit
sauce or syrup
