Strawberry Cassava Flour Pancakes

These are gluten free, dairy free and low FODMAP!

 


½ cup of Hearthy Cassava flour

1 cup all-purpose GF flour

2 teaspoons of baking powder

½ teaspoon of salt

1 ¼ cup of walnut milk (or water)

1 egg yolk

3 egg whites

2 tablespoons of olive oil

2 tablespoons of maple syrup

1 teaspoon of vanilla


  • Whisk dry ingredients
  • Beat egg whites until fluffy
  • Whisk remaining wet ingredients
  • Stir wet into dry and fold in whites
  • Cook ¼ cup batter on griddle about 2-3 minutes per side

Serve with fruit sauce or syrup
