Super Bowl Lobster Rolls – GF & Low FODMAP
Chiefs or 49ers –
either way, we’re in red today so I’m bringing lobster rolls to our neighbors
for the big game!
- Boil and chop 6 small lobster tails
- Squeeze fresh lemon juice on the lobster
Combine in a bowl
with:
- 1 tablespoon of dried dill
- 1 tablespoon of dried chives
- 2 chopped celery stalks (this should be a safe serving size but if mannitol bothers you, ease up on the amount of celery and substitute some bell pepper for a crunchy texture
- 1/2 cup of mayonnaise
- 1/4 cup of green onion (green tops only)
Serve on gluten free
rolls lined with arugula and top with fresh chives and dill (makes 8)
