Burrata & Tomato Salad – GF & Low FODMAP
Our good friends are
in Aruba this week and it reminded me of the salad I ate every day when we were
there. Ironically, he hates cheese but I
did get him to try the burrata there – food always seems to taste better on
vacation.
Toss chopped tomatoes
and arugula in garlic infused olive oil and sea salt
Top with burrata cheese
and pine nuts
