Let’s Get Fresh - Strawberry Mint Salad
I really start to
miss all the fresh herbs and produce this time of year – winters in Wisconsin
can get to be long!
Last summer I cut
and froze some mint from my herb garden so I’m going to try it out in this
recipe. It works great in smoothies but
we’ll see how it holds up in a fresh salad (it does NOT work very well - use fresh)
Rinse and slice 1
pint of fresh organic strawberries
Rinse and chop 1
medium cucumber
Rinse and cut the
tops of ½ bunch of green onion (don’t use the white portion)
Chop ¼ cup of
walnuts
Combine in bowl, add
1 teaspoon of dried mint and sea salt to taste
Squeeze fresh lime
juice into salad, drizzle with balsamic vinegar & top with torn fresh mint leaves
