Let’s Get Fresh – Butternut Squash Cranberry Salad
This is my favorite
salad for steak night – it’s not a completely fresh recipe but it’s really good
topped on a grilled tenderloin

below if necessary
- 3 large handfuls of arugula
- 1 butternut squash spiralized (or 1 pack of store-bought butternut squash noodles) sautéed in olive oil until soft – about 15 minutes
- 1 handful of chopped walnuts
- 1 handful of dried cranberries
- 1 handful of feta cheese
Low FODMAP
Notes: use sweet potato noodles in place
of butternut squash or limit intake to 1/3 cup of noodles, skip dried
cranberries or limit intake to 1 tablespoon
