Tropical Beans & Rice
A favorite meatless Monday dish in our house and I served it up in a pineapple boat because what is better than food served in more food?
Arborio rice
Red bell pepper
Dried cilantro
Massel’s plant-based
stock cube or low FODMAP broth
Garlic infused olive
oil
Fresh cilantro
leaves
Lime
Black beans (keep serving
size to ¼ cup)
Mandarin oranges
Green onion (tops only)
Whole pineapple
(optional)
Nuts (optional)
Cook arborio rice
according to package instructions with garlic infused olive oil, chopped red
bell pepper, 1 massel cube and dried cilantro.
You can use low FODMAP broth in place of the massel stock cube and
water.
Let cool slightly and
finish with a squeeze of fresh lime juice, lime zest and chopped fresh
cilantro.
If desired, serve in
a pineapple boat – I do like the extra sweetness from the pineapple. Top rice with warmed black beans, chopped green
onion, mandarin oranges and salt to taste.
I did add some
banana rum pecans for extra crunch!
