National Egg Roll Day

It’s National Egg Roll Day and I'm serving up these GF, low FODMAP, out of the box egg rolls with some fried rice!

 

I discovered these egg rolls by geefree in the freezer section at our grocery store.  They are not only gluten free but they’re also low FODMAP (scallions are used in place of onion and no garlic is listed).  I have been busy making up for missing out on 15+ years of no egg rolls!

 


Fried rice – cook arborio rice according to package instructions with garlic infused olive oil and broth in place of butter and water or add a Massel brand stock cube if you do not have broth and garlic oil on hand.

 

Once rice is cooled (it’s better to use leftover rice for this but freshly made will work) pan fry with red bell pepper, eggs and top with green onion before serving.
