Caesar Salad – Low FODMAP Style

I was so happy to discover a low FODMAP Caesar salad dressing!  10 minutes to pull together this version of America’s favorite salad and it pairs well with any family dinner!

 


Mixed greens (I used arugula instead of the traditional Romaine)

GF bread (I used Schar brand)

Hard-boiled eggs (because why not?)

Parmesan cheese

Garlic infused olive oil

Caesar dressing (I used FODY brand)

 

Cube and toss GF bread in garlic infused olive oil and salt, toast in oven about 7 minutes at 375

Hard boil eggs (about 5 minutes at full boil), peel/chop

Add lettuce, eggs, croutons to bowl, top with grated parmesan cheese and serve with Caesar style dressing

 

Note:  if you cannot find low FODMAP Caesar dressing, I also love a good honey mustard one:

3 tablespoons of mayonnaise

1 tablespoon of stone ground mustard

1 tablespoon of olive oil

1 tablespoon of apple cider vinegar

2 teaspoons of honey

Sea salt to taste
