Lemon Parm Chickpea
Pasta – GF & Low FODMAP
It’s meatless Monday
and this meal is on the table in about 15 minutes
Chickpea noodles (I used
the risoni style from Explore Cuisine - it’s just chickpeas)
Garlic infused olive
oil
Arugula and/or
spinach
Parmesan cheese
Lemon
Sea salt
Cook noodles according
to package instructions (about 8 minutes)
Sautee vegetables in
garlic infused olive oil and sea salt
Shred parmesan cheese
while vegetables and noodles are cooking
Drain noodles, drizzle in olive oil, top with sauteed veggies and shredded cheese
Squeeze
fresh lemon juice over the top, salt to taste.
