Sweet Apple Ham & Cheese – Grain Free and Low FODMAP
My friends got me a
mini waffle maker and it’s perfect for making sandwiches! I’ve been trying out the fruit and vegetable flours
in place of grain flours and I really like the apple four and sweet potato flour
combo for waffles. These keep really
well in the refrigerator and the freezer so you can make large batches and just
pop them in the toaster to heat them up.

you can also quarter these and serve as an appetizer |
- 2 waffles made according to package instructions
- Deli ham – watch the ingredients, some are coated in caramel color or preserved with undesirable additives
- Cheese – I used a grass-fed cheddar
- Sliced green apples – you want these in thin slices or matchstick style
- Ghee or soft butter for the frying pan
Butter the waffles,
put butter side down and layer with ham, apple, cheese and top with the remaining
waffle
Fry on low heat
until the ham is warm and cheese is melted
Serve with mustard
chive dipping sauce:
Combine 1/3 stone
ground mustard with 2/3 mayonnaise and mix in fresh or dried chives (choose a
mustard brand without garlic if you are low FODMAP)
