Farmer’s Breakfast Salad

I am in love with the farmers cheese that I picked up during a tour of a local cheese factory and I’m building a breakfast salad around it!

 


  • Arugula
  • Gold potatoes
  • Bacon – cooked and chopped
  • Eggs
  • Shredded cheese (I used farmers cheese)
  • Diced fresh parsley
  • Sea salt
  • Olive oil

 

Instructions:  par cook potatoes in the microwave until semi soft, cool until safe to handle, chop and add to fry pan with olive oil, sea salt, and parsley - cook to desired texture (about 5 minutes)

Boil eggs while potatoes are cooking – about 5 minutes for a soft boiled or longer for medium/hard

Top arugula with potato mixture, bacon, eggs and cheese – add additional sea salt to taste
